A couple of us tried but failed to open a folding knife with one hand. Shopkeeper demonstrated how to open it with just one hand by pressing the handle grip itself before flicking the blade out by thumb. Martin was skilled with the butterfly knife. A few knives and swords in the store were for display only, not for sale.
